What do you eat on a cold, snowy night when you’ve promised your daughter you’d watch "Cloudy with a Chance of Meatballs" with her? Why meatballs of course! I was trying to decide what to make with the other package of ground turkey I had in the fridge and meatballs seemed the perfect thing.
I was tired of the same ole’ spaghetti noodles and thought some nice and hearty rigatoni pasta sounded so comforting. The meatballs were perfect, not too over seasoned where they distracted from the sauce but also very flavorful (sometimes meatballs can be bland).
And, once again ground turkey was a great stand in for the usual ground beef, and far more healthy. Don’t shy away from ground turkey and chicken, I think you’ll be surprised at how versatile it is as a stand in for ground beef dishes. Hope you’ll give my:
