So what do you do when your mother in law gives you a bag of lemons…no you don’t make lemonade (how cliché!)…you make Lemon Sautéed Shrimp and Pesto over Penne Pasta and Lemon Thyme Cornmeal Cake with Lemon Glaze and Raspberries.
I promised you that if you would grow your own herbs I would provide you with recipes to use them, and I aim to please.
Pesto is one of the easiest things to make using basil and it freezes beautifully. Making your own is obviously cheaper than buying it, but it can still be expensive to make because it normally calls for pine nuts, which can be pricey. I stumbled upon a recipe for pesto that calls for walnuts, which are a whole lot cheaper than pine nuts. Guess what…it’s delicious! I can’t even tell the difference.
I was a little nervous the other day when I hit the seafood section of Kroger, but was pleasantly surprised that at least on that day the price of shrimp had not increased. I was able to hit the often-advertised buy one-pound get one free sale. So I was able to get my shrimp for $4.99 a pound. I want to use shrimp as much as my budget will allow these days. I think it's important to support the men and women on the Gulf who provide us with our great seafood during this awful disaster. So keep buying that shrimp! Between making my own pesto and finding the shrimp on sale, this meal turned out to be a lot of bang for your buck! Now here’s an even better deal for you, if you want a vegetarian dish this one would be perfect with just the pasta and pesto sauce and it would cost you .44 a serving! Talk about gourmet for less!
Lemon Sautéed Shrimp and Pesto over Penne Pasta created by Heather
Walnut Basil Pesto-Dahlia from Recipe Zaar
(makes enough for 2 batches, freeze the remaining for another meal)
2 cups fresh basil-freebie from the garden
½ cup chopped walnuts-.75
2 cloves garlic-.08
1/3 cup olive oil-PI
1 Tbs. butter softened-.05
½ cup Parmesan cheese-.50
Place basil, olive oil, walnuts, garlic and salt in food processor or blender. Blend until thoroughly combined. Add Parmesan and butter and blend 5-10 seconds more. Just before serving, add 2 Tbsp of hot pasta water from cooked pasta.
Prepared Pesto....Isn't it beautiful?! Red, White and Green....a nod to Italy!
Shrimp and Pasta
1 lb. peeled, de-veined shrimp with tails removed (can be raw or cooked) $4.99
1 lemon juiced-freebie
1 Tbs. Olive Oil-PI
½ box penne pasta .75
fresh grated Parmesan cheese .50
Thaw shrimp if frozen. Cook penne according to directions and drain. Heat large sauté pan and add olive oil and juice from lemon. Stir in shrimp and sauté until cooked through.

Add in pasta and approximately half of pesto to taste. Stir together until warmed through. Plate and add Parmesan cheese to garnish.
