Welcome to Souper Sister Saturday! I'm so excited to have you over for our first virtual soup exchange. This is where my sister the creative force behind Southern In My Heart and I pretend we live close by each other, and not actually thousands of miles apart, and you are invited to join us!

I have this group of ladies that I love. They are all very near and dear to my heart.
We are all very different from one another. We are every color. Every size. Different backgrounds. Different churches. Different personalities.
But we have four things in common. We love Christ. We love our families. We love homeschooling. And we love each other.
We make up the board and teachers of a homeschool co-operative, and we have a passion for what we do. Often that passion leads to fatigue and weariness as we work through planning, implementing and running what is basically a small school that meets each week. There are moments when we need to relax, refresh and laugh together. I felt a girls "soup night" was the perfect thing.
I invited these ladies to come to my home. To eat, talk and laugh. I wanted to provide them with a moment of rest...
Some soup to warm them on a chilly fall evening...
a pumpkin cupcake with cinnamon cream cheese frosting..or two..or three..
but, instead they once again provided me with so much more.
Wisdom. Prayer. Encouragement. Thought Provoking Discussion. Discernment. Acceptance.
All of those things you hope someday to find in a group of women, but wonder if you ever will...I have found in them.
They get me. They get my fears (am I ruining my kids forever by homeschooling). They get my triumphs (I taught my child to read!). They get my sorrows (I feel judged by the world sometimes for choosing this path) They get my greatest joys (I have an opportunity to really KNOW my children).
So, today's Souper Sister Saturday is not only dedicated to my OWN sister who knows me inside and out and ..but also to my homeschool sisters. My battle weary sisters...who keep on fighting the good fight, knowing it's what God has called them to do. My sisters who are building up the walls with one hand and fighting off the enemy with the other. To you I say, "Thank you for pouring into my life and the lives of my children. Thank you for being a "sister" when mine lives so very far away. I love you all."
Following is the great soup I made for my Souper Supper,Curried Pumpkin Soup. This soup screams fall and harvest and cozy fires and all of those things you associate with autumn. It's creamy with a little kick from the curry and it is SO easy to make! Hope you'll give it a try!
Curried Pumpkin Soup
Serves 4-6
Ingredients:
1 large onion, chopped
1/4 cup butter
3/4 tsp. curry powder
2 cups canned pumpkin
2 1/2 cups chicken stock
1/2 tsp. salt
1/4 tsp. white pepper
2 cups heavy cream
additional: sour cream for topping
Directions:
Saute onion in butter in dutch oven until soft and caramelized. Sprinkle with curry powder and continue to cook for an additional 2 minutes. Add canned pumpkin to dutch oven and using a immersion blender puree pumpkin until creamy. (additionally you can place onion and pumpkin in blender and blend until pureed). Add chicken stock to pumpkin mixture, heating slowly. Allow to simmer for 5 minutes. Add in salt, pepper and cream. Allow soup to heat through, but do not allow soup to boil after cream has been added. Can be topped with a dollop of sour cream.
